The Simplest Chicken and Veggie Casserole

Gut Healing Chicken and Veg Casserole

This chicken and vegetable casserole contains gut healing ingredients, calming the tummy and the mind. Simple, quick, versatile and delicious.



Ingredients:

  • 500g of organic chicken stripes, cut into bite-sized pieces

  • 1 carrot, peeled and roughly chopped

  • 3 white potatoes, peeled and roughly chopped

  • 2 green or red capsicums, roughly chopped

  • 1 red onion, roughly chopped

  • 2 cloves garlic, minced

  • 10g of organic butter

  • 2 cups chicken broth

  • 1 teaspoon dried oregano

  • Sea salt to flavour

Optional:

  • 2 cups cooked rice OR

  • 2 buckwheat crackers



Instructions:

  1. Turn on The Slow Cooker. Mine needed 34 minute baking option.

  2. Place Ingredients in Layers: Start with 5g of butter, then onion, followed by potatoes, chicken, carrots, potatoes and capsicum on top. Add another 5g of butter and pour bone broth.

  3. Spices: sprinkle oregano, salt (and any other flavoring you might like).

  4. Slow Cook: Cover the casserole dish with lid and leave for 34 minutes (or longer depending on the type of the slow cooker you have).

  5. Serve: Remove from the slow cooker and let it rest for a few minutes before serving. Scoop out generous portions and enjoy your comforting chicken casserole!
