Gut Healing Food That Satisfies The Whole Family
This chicken and vegetable casserole contains gut healing ingredients, calming the tummy and the mind. Simple, quick, versatile and delicious.
Ingredients:
500g of organic chicken stripes, cut into bite-sized pieces
1 carrot, peeled and roughly chopped
3 white potatoes, peeled and roughly chopped
2 green or red capsicums, roughly chopped
1 red onion, roughly chopped
2 cloves garlic, minced
10g of organic butter
2 cups chicken broth
1 teaspoon dried oregano
Sea salt to flavour
Optional:
2 cups cooked rice OR
2 buckwheat crackers
Instructions:
Turn on The Slow Cooker. Mine needed 34 minute baking option.
Place Ingredients in Layers: Start with 5g of butter, then onion, followed by potatoes, chicken, carrots, potatoes and capsicum on top. Add another 5g of butter and pour bone broth.
Spices: sprinkle oregano, salt (and any other flavoring you might like).
Slow Cook: Cover the casserole dish with lid and leave for 34 minutes (or longer depending on the type of the slow cooker you have).
Serve: Remove from the slow cooker and let it rest for a few minutes before serving. Scoop out generous portions and enjoy your comforting chicken casserole!
