Colder months tend to invite unwanted infections that can have you in bed for days, and even weeks. This medicinal mushroom recipe is for rejuvination, recovery and deep immune protection.
This is a great fortnightly staple dish for the whole family, and will also assist those in recovery from infections, debility, and recovery from accidents. It can be used with a variety of vegetables but it is best to use seasonal food for greater nature support.
This recipe can be used as a base for many of your favorite soups, building your way up from here.
Ingredients:
1 large onion, chopped
1 medium capsicum
5 garlic cloves
2 teaspoons coconut oil
8 cups water or homemade broth (veggie or meat based)
1 large sweet potato, peeled and cut into 1cm cubes
2 large carrots, peeled and shredded
2 teaspoons of Reishi mushroom powder
2 teaspoons of Chaga mushroom powder
2 teaspoons of Cordyceps mushroom powder
1 small piece of fresh ginger, minced
2 teaspoons of Siberian Ginseng dried leaves
Directions:
In a large pot, sauté the onions, capsicum, and garlic in coconut oil. Add the broth (or water) at the time the ingredients start to caramelize.
Add the sweet potato, carrots, mushrooms, ginger, Siberian ginseng in broth/water. Optional: use a proportion of 1:3, and allow 1/2 of water to evaporate to have a rich stock. Let it simmer for an hour. For variety, you can add other vegetables here (like shallots, squash, corn, fennel, pumpkin, parsnip, etc) and your choice of protein or seaweed.
After a 1 hour, turn the heat off.
Add your fresh culinary herbs of choice, such as oregano, thyme, coriander, basil r sage. Place the top back on for it to infuse a couple minutes with the heat off.
Serve in a bowl and add in your favorite greens, such as kale, sprouts, and/or rocket.
